150 grams Emmentaler cheese
1 Tbsp finely chopped parsley
100 grams Goat cheese

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Rinse the spinach, chop into smaller pieces and blanch in boiling salt water. Rinse in cold water, drain and squeeze. Coarsely chop the spinach. Peel and finely dice one onion and the garlic.

Saute the diced onion and garlic in hot butter. Add the bacon and cook briefly. Add the spinach. Season with salt, pepper, nutmeg and lemon juice. Peel the remaining onions and cut into rings. Separate the egg. Rub the emmentaler and mix with the egg yolk, onions, crumbled goat cheese and season with salt, pepper and parsley.

Beat the egg white until stiff and gently fold into the cheese mixture. Pour the spinach and bacon into a buttered baking dish. Spread the cheese mixture on top. Bake for 25-30 minutes, until golden brown. Remove from the oven and serve immediately.
