250 grams Strawberries
1 handful Basil
2 shallots
150 grams Bacon (sliced)
5 Tbsps olive oil
4 Tbsps balsamic vinegar
1 tsp honey
Sea salt

Preparation steps

Rinse and dry the spinach. Rinse and trim the strawberries. Halve the strawberries and cut into pieces. Rinse and dry the basil. Remove the leaves from the stems and chiffonade. Peel the shallot and cut into rings. Cut the bacon into large pieces. Heat 1 tablespoon of the oil in a pan, and sauté the bacon and shallots for 5 minutes, until golden brown.

For the dressing, mix the balsamic vinegar with the honey and the remaining oil. Season to taste with salt and pepper.

Mix the strawberries, spinach, and basil in a bowl. Crumble the goat cheese over the top, then mix until combined. Arrange the salad on plates. Top with the bacon and shallots, and serve with the dressing.
