6 ½ cups floury potatoes (peeled and quartered)
cup milk
3 scallions (chopped)
0.333 cup melted butter

Preparation steps

1.
Cook the potatoes in salted, boiling water for 20-30 minutes until tender. Drain and leave to steam off.
2.
Place the milk and spring onions in a pot and heat for 5 minutes but do not allow to boil.
3.
Mash the potatoes gradually adding the milk and spring onions. Season with salt and ground black pepper.
4.
Place the potatoes in four bowls and create a well in the middle of each one. Pour the melted butter equally into each well. Season with ground black pepper and serve immediately.
