Ingredients

For the cupcakes
1 large egg
½ cup sugar
1 cup milk
1 tsp vanilla extract
½ cup butter (melted and cooled)
2 cups all-purpose flour
1 Tbsp Baking powder
½ tsp salt
For the frosting
2 Tbsps unsalted butter
12 ozs white Mini Marshmallow
¼ cup heavy cream
To decorate
8 ozs green Marzipan
powdered sugar

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in a 12 hole muffin tin.

Beat the eggs in a mixing bowl and then beat in the sugar, milk and vanilla. Gradually beat in the butter until combined.

Sift in the flour, baking powder and salt and stir quickly until just combined. The mixture will be lumpy.

Pour the mixture into the paper cases and bake for about 20 minutes, until risen and golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

For the frosting: put all the ingredients into a pan and heat gently, stirring until the marshmallows and butter have melted. Set aside to cool until thickened and spreadable.
6.
To decorate: roll out the marzipan on a surface lightly dusted with icing sugar. Using a stencil or cookie cutter, cut out clover leaf shapes.
7.
Spread the frosting over the cakes and place a clover leaf on top of each.
