- Ingredients
- 4 waxy potatoes (approx.4 ounces each)
- 1 Tbsp vegetable oil
- 4 beef tenderloin (approx. 6 ounces each)
- 2 Tbsps butter
- 1 onion (diced)
- 1.333 cups cream
- 1 cup Walnut (chopped)
Preparation steps
1.
Heat the oven to 200°C / 400°F, and line a baking tray with grease-proof paper.
2.
Cook the potatoes in their skins in salted, boiling water for around 20 minutes.
3.
Heat the oil in a pan and quickly fry the meat on each side on a high heat. Remove from the pan and season with salt and ground black pepper.
4.
Drain the potatoes, cut a cross in them and add the butter. Place on the prepared baking tray and bake for around 10 minutes.
5.
After five minutes add the meat to baking tray in the oven and cook for 5 minutes (more of less depending on preference). Remove from the oven, season with salt and ground black pepper and leave to rest.
6.
Saute the onion in the steak juices, deglaze the pan with the cream and cook for about 10 minutes on medium heat. Finally add the chopped walnuts, season and serve with the meat and potatoes.
