63 ozs whole Salmon (gutted; rinsed; and dried)
salt (to taste)
freshly ground Black pepper (to taste)
1 lemon (thinly sliced)
1 large white onion (thinly sliced)
1 Cucumber (peeled and thinly sliced)
1 bunch fresh Dill (divided)
cup dry white wine
Lemon wedge (for garnish)

Preparation steps

Preheat oven to 350º F. Line a large roasting pan with heavy-duty aluminum foil.

Place the prepared salmon on the aluminum foil. Rub lightly with oil and season the inside of the body cavity with salt and pepper. Layer the lemon, onion, cucumber slices, and one half of the dill inside the body cavity, sprinkling some over the top of the salmon also. Pour the wine over the fish. Wrap the foil over the salmon, securely sealing the edges together so it is leak-proof.

Poach for 30 minutes. Cool slightly and carefully unwrap the aluminum foil. Discard the lemon, onion, cucumber and dill. Carefully peel away the skin on both sides, working from tail to head. Can be served hot or cold. If serving cold, chill completely. Garnish with lemon and remaining fresh dill.
