400 grams Beef fillet
1 tsp cornstarch
1 tsp soy sauce
1 tsp sherry
¼ tsp Chili powder
400 Asparagus
2 Tbsps vegetable oil
2 Tbsps soy sauce
2 Tbsps sherry
3 Tbsps Chicken broth
1 tsp cornstarch
peppers
½ tsp sugar

Preparation steps

Cut the meat across the grain into thin slices. Coat the meat slices with cornstarch, then place in a bowl and sprinkle with soy sauce, sherry and chili powder. Stir to combine and refrigerate 30 minutes.

Rinse asparagus, peel the lower portion, cut off ends and cut into small pieces. Cook asparagus in boiling salted water until al dente, 10-12 minutes. Allow to drain.

Add oil to a large wok and brown the meat on all sides quickly.

Stir the remaining ingredients in a small bowl, pour over the meat and bring to a boil. Add asparagus and stir-fry over high heat until heated through. Arrange on plates and serve garnished as desired with very fine strips of vegetables (such as carrots, celery, etc.), if desired.
