Ingredients

For the strawberries
500 grams un-ripe Strawberries
1 large egg
50 grams Pastry flour
50 grams flaked almonds
125 milliliters milk
2 Tbsps sugar
Frying oil
powdered sugar (for dusting)
For the sauce
2 medium egg yolks
2 Tbsps sugar
2 Tbsps Orange liqueur
150 milliliters white wine

Preparation steps

1.

For the strawberries, rinse them and pat dry. Separate the egg and whisk the white until almost stiff. Combine the flour with the almonds, milk, egg yolk and sugar. Fold into the egg white.

Heat the oil to 175ºC (approximately 350ºF).

Dip the strawberries 2/3 into the batter and fry until golden brown. Remove with a slotted spoon and drain on absorbent paper.

For the sauce, mix the egg yolk with the sugar, orange liqueur and white wine in a bowl. Place over a pan of hot water and beat with a whisk.

Dust the strawberries with powdered sugar and serve with the sauce.
