100 grams sugar
500 grams Strawberries
3 egg whites
20 grams butter
1 Tbsp powdered sugar

Preparation steps

1.

Mix eggs in a bowl with milk. Stir in flour and 30 grams (approximately 1 ounce) of sugar and let batter rest for 30 minutes. Preheat the oven to 250°C (approximately 475°F). Rinse strawberries, pat dry and cut in half.

Beat egg whites in a bowl with remaining sugar until stiff.

Melt half of butter in a frying pan and individually fry 8 thin crepes from batter. Reserve some strawberries for garnish. Arrange remaining strawberries in the center of crepes and fold. Place crepes in an ovenproof dish. Cover each crepe with stiffly beaten egg whites using a piping bag. Bake in the preheated oven for 2 minutes until meringue peaks are lightly browned. Arrange two crepes on plates and sprinkle with powdered sugar. Garnish with reserved strawberries.
