2 Tbsps Mayonnaise
½ tsp mediu- hot Mustard
½ tsp Tomato paste

1 splash lemon juice
1 large Lettuce
3 Tomatoes
½ Cucumber
3 Tbsps olive oil
1 ½ Tbsps White vinegar
4 Radish

Preparation steps

Peel the eggs, halve and gently remove the yolk without damaging the egg white. Press the yolks through a fine sieve and mix with the mayonnaise, mustard and tomato paste. Season with salt, pepper and a dash of lemon juice and place in a piping bag fitted with a plain tip.

Fill the egg whites with the mixtre and garnish with a pea. Trim the lettuce, remove the core and separate the leaves. Rinse, spin dry and tear into small pieces. Blanch the tomatoes, rinse under cold water, peel, quarter, core and cut the flesh into small pieces. Rinse the cucumber, cut into quarters lengthwise and thinly slice.

Mix the tomatoes, cucumber, lettuce, oil and vinegar mix and season well with salt and pepper. Rinse, trim and cut the radishes into a star shape. Arrange the salad in a bowl, place the stuffed eggs and radishes on top and serve with a baguette, if desired.
