Ingredients

For the stuffed kohlrabi
4 large Kohlrabi
salt
1 small carrot
1 Red chili pepper
1 egg yolk
1 Tbsp freshly chopped parsley
1 pinch dried thyme
250 grams mixed Ground meat
freshly ground peppers
4 Tbsps grated Cheese (such as Emmentaler)

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

For the stuffed kohlrabi: Peel the kohlrabi, cut a small piece off of each kohlrabi bottom for a base, cut off a lid and then scoop out the flesh, leaving a 1 cm (approximately 1/3 inch) shell. Cook the kohlrabi in salted boiling water for about 10 minutes. Remove and pat dry. Peel the carrot and finely chop. Rinse the chile, cut in half, remove the seeds and finely chop. Combine the carrot, chile, egg yolk, parsley, thyme and meat. Season with salt and pepper then use to fill the kohlrabi. Arrange on a baking sheet, sprinkle with cheese and bake for about 20 minutes.
