800 grams Pork tenderloin (trimmed)
6 slices Bacon
600 grams potatoes
2 Tbsps rosemary (chopped)
2 Apple
2 garlic cloves (peeled)
1 bunch Sage
4 Tbsps olive oil

Preparation steps

Rinse the potatoes, cut in half or quarter depending on size and place on aluminum foil. Sprinkle with rosemary. Season with 2 tablespoons olive oil, salt and pepper, wrap and bake in preheated oven at 180°C (approximately 350°F) for about 40 minutes.

Rinse pork, pat dry and cut a pocket along the side.

Rinse apples, quarter, remove cores and cut into wedges. Finely chop sage. Mix with half the apples and mix in chopped garlic cloves. Fill the pork and tie together with kitchen twine. Wrap with bacon and season with salt and pepper. Place the remaining apples in a roasting pan or baking dish and place pork on top. Drizzle with remaining oil and pour in some water. Slide next to the potatoes in the oven and cook about 25-30 minutes until golden brown. If needed pour in some more water. Before serving, remove kitchen twine. Serve with potatoes and apple slices.
