½ bunch Radish
4 Tbsps Red wine vinegar
salt
2 tsps honey
3 Tbsps Rice vinegar
1 Tbsp Yogurt (3.5% fat)
1 Tbsp Crème fraiche
1 tsp Wasabi paste
½ Cucumber
½ nori leaf
16 ozs Tuna (Sushi quality)
1 tsp white Sesame seeds
½ tsp black Sesame seeds

Preparation steps

1.

Rinse rice well in a sieve, cover with double the amount of water and cook over low heat for 12-15 minutes.

In the meantime, clean, wash and finely slice the radishes. Mix red wine vinegar with 1 pinch salt and 1 tsp honey and marinate radishes in it.

Mix rice vinegar, remaining honey, 3 Tablespoons water, and 1 pinch of salt. Drain the rice and spread it on a baking sheet or in a shallow baking dish. Mix with marinade and leave to cool.

Mix yogurt with crème fraîche and wasabi. Peel the cucumber and cut it into spaghetti with a spiral cutter. Cut nori leaf into fine strips about 2-inch long. Wash tuna, dab dry and cut into 2 cm cubes.

5.

Put rice in bowls, arrange cucumbers and radishes on top. Spread tuna cubes on top and sprinkle with sesame seeds. Sprinkle the nori strips on top and put some wasabi cream in each bowl.
