- 36 ozs potatoes
- salt
- 2 onions
- 1 Tbsp olive oil
- 10 ozs Vegetable broth
- 4 Tbsps apple cider vinegar
- 1 bunch Chives
- 4 Tbsps Canola oil
- peppers
Preparation steps
Wash potatoes and cook in boiling salted water for about 20 minutes. Then drain and leave to cool.
Peel and finely dice onions. Heat olive oil in a pot and sauté onions over medium heat for approx. 3 minutes. Deglaze with broth and let steep for approx. 5 minutes.
Meanwhile, peel potatoes and cut into slices. Place in a bowl and pour hot broth mixture over them. Add apple cider vinegar and mix everything together well. Leave to infuse for one hour.
Then wash the chives, shake dry and cut into fine rings. Add to the potatoes with oil, mix everything well, season with salt and pepper, and serve Swabian potato salad.
