Ingredients

For the noodles
200 grams Whole wheat flour
2 eggs
2 tsps vegetable oil
1 pinch salt
water
Pastry flour (for dusting)
For the sauce
200 grams dried Apricot
75 grams sugar
3 Oranges (juiced)
½ lemon (juiced)
1 tsp balsamic vinegar
¼ tsp Orange peel
¼ tsp Lemon peel
10 grams butter
To serve
40 grams butter

powdered sugar (for dusting)

Preparation steps

For the dough: Knead all ingredients together until smooth. Cover with plastic wrap and set aside to rest for 1 hour. On a floured work surface, roll out the dough until about 2 mm (approximately 1/8 inch) thick and cut into irregular pieces with a knife. Cook in lightly salted boiling water for 5-7 minutes, until al dente. Drain and let cool.

For the apricot sauce: Soak the apricots in warm water for about 30 minutes. Drain and cut into quarters. Caramelize the sugar in a pan. Deglaze with the orange juice, lemon juice and vinegar. Whisk in the citrus zest and the butter until emulsified. Add the chopped apricots and gently warm. Toss the noodles in butter. Serve the noodles with apricot sauce, garnished with mint leaves and dusted with powdered sugar.
