600 grams waxy, small Sweet potato
200 grams streaky Bacon (sliced)
5 sour Apple
¼ l Whipped cream
1 egg
salt
freshly ground peppers
1 Tbsp sweet Mustard
4 scallions
8 Tbsps grated Emmentaler cheese

Preparation steps

Boil the potatoes in water until tender and then peel. Rinse the apples, remove the cores and cut into slices. Rinse the scallions and cut into pieces. Cut the bacon into bite-sized pieces.

Combine the cream with the egg, 6 tablespoons of cheese and the mustard. Mix well and season with salt and pepper.

Lay the potatoes, apples and scallions on a baking sheet and pour the cream-egg mixture over it. Distribute the bacon and the remaining cheese on top.

Cook in the oven at 200°C (approximately 400ºF) for 30 minutes until golden brown.
