4 Sweet potato
1 Tbsp Peanut oil
1 garlic clove
3 ½ ozs soft butter
2 ¼ ozs Tahini (sesame paste; 4 tablespoons)
1 Tbsp Lime juice
salt
ground Cumin
peppers
½ bunch Chives
1 organic lime
1 Tbsp Sesame seeds

Preparation steps

1.

Wash sweet potatoes thoroughly, cut in half lengthwise and place in a baking dish. Brush with oil and cook in a preheated oven at 200 °C / 400 °F for 30-35 minutes until soft.

Meanwhile, peel and finely chop garlic. Mix butter with tahini until creamy and season with lime juice, salt, cumin and pepper.

Season potatoes with salt and pepper, brush each with a little tahini butter and let melt in a turned-off oven for 10 minutes.

Meanwhile, wash chives, shake dry and chop finely. Rinse lime and cut into wedges. Remove potatoes from oven, sprinkle with sesame seeds and chives. Serve with remaining tahini butter and lime wedges.
