800 grams Swordfish
5 Tbsps butter
1 bunch Sage
8 slices Prosciutto
white peppers (freshly ground)
125 milliliters white wine

Preparation steps

Rinse swordfish, pat dry and cut into approximately equal slices. (Approximately 3 slices per person). Cut prosciutto in half if necessary and place a piece on each swordfish. Place a sage leaf on each prosciutto and secure with toothpicks. Heat 2 tablespoons hot butter in a large pan and fry swordfish on both sides for about 1-2 minutes each until golden brown. Remove from the pan and arrange on warmed plates. Deglaze pan drippings with white wine, boil briefly and drizzle over swordfish.
