½ cube fresh Yeast (21 g)
400 grams Pastry flour
1 tsp salt
For the topping
1 shallot
1 garlic clove
1 Tbsp olive oil
350 grams Ground beef
250 grams pieced Tomatoes (socket)

250 grams Sour cream
1 egg yolk
1 maturity Avocado
2 Tomatoes
1 tsp lemon juice

Preparation steps

Place the yeast in a bowl with 250 ml (approximately 1 cup) of lukewarm water. In a seperate bowl, mix the flour with the salt and form a well in the middle. Pour the yeast mixture into the well and work everything quickly into a smooth dough. Cover and let rest 1 hour in a warm place. Knead. For the topping, finely chop the shallot and garlic. Saute until translucent in a hot pan with oil.

Brown the ground beef in the pan with the shallot and garlic. Add the tomatoes, stir, and season with salt and pepper. Rinse the beans and drain well in a colander. Stir the beans into the ground beef mixture. Preheat the oven to 250° C (approximately 475° F) top and bottom heat.

Put the dough on a floured surface and roll out thinly. Cut into triangles. Stir the sour cream with the egg yolks and season with salt and pepper. Spread the sour cream mixture onto the dough, spoon the ground beef mixture over the top, and bake in preheated oven for 10 minutes. Meanwhile, cut in half the avocado, remove the seed, press the flesh from the shell, and dice finely. Blanch the tomatoes, peel, quarter, core, and also cut into small cubes. Toss together the avocado, tomatoes, and the lemon juice. Spoon over the tart and serve garnished with fresh cilantro leaves.
