- 200 grams Chestnut mushroom
- 400 grams Tagliatelle
- salt
- 1 bunch Chives
- 5 Tbsps olive oil
- 1 garlic clove
- 1 generous pinch Red pepper flakes
- 2 Tbsps freshly grated Parmesan
Preparation steps

Clean the mushrooms and thinly slices. Cook the tagliatelle in boiling salted water according to the package directions until al dente. Cut the chives into 2 cm (approximately 3/4 inch) long pieces. Set aside 2 tablespoons of chives for garnish.

For the chive oil, mix the remaining chives, 3 tablespoons of olive oil, the peeled garlic, chili, parmesan cheese, and a little pasta water.

Sauté the mushrooms in 1 tablespoon of oil until browned. Add the drained tagliatelle and the chive oil, and mix until combined. Cook for 1 minute, then season to taste with salt. Place the pasta into preheated bowls or plates. Garnish with the reserved chives, and serve.
