19 ozs Sirloin steak
vegetable oil

1 green Lettuce
4 ripe Tomatoes (quartered)
2 Red onions (sliced)
fresh cilantro
For the dressing
4 tsps Palm sugar (grated)
3 Limes (juice)
¾ cup Fish sauce
2 red chili peppers (finely chopped)

Preparation steps

1.
Brush the steak with oil and season with salt and freshly ground black pepper.
2.
Heat a frying pan, then add the steak and cook for 3-6 minutes on each side, or until cooked to your liking. Remove from the heat and set aside.
3.
Put the lettuce leaves into a large bowl. Add the tomatoes and onions.
4.
For the dressing: mix the palm sugar with the lime juice until dissolved. Add the fish sauce and chillies. Add more sugar or fish sauce according to taste.
5.
Slice the steak and add to the salad ingredients in the bowl with the meat juices.
6.
Chop half the coriander leaves and add to the bowl.
7.
Add the dressing and mix together well.
8.
Place in a serving bowl and garnish with the whole coriander leaves.
