200 grams Napa cabbage
120 grams Snow peas

1 Tbsp Rice vinegar
1 Tbsp honey
2 Tbsps Lime juice
4 Tbsps sweet and sour Chili sauce
½ red chili pepper
100 grams Cashews
4 sweet and sour Apple (such as Topaz)
4 Tbsps soy sauce (for drizzling)

Preparation steps

Rinse and dry the cilantro and basil, then remove the leaves from the stems. Rinse and dry the cabbage, and thinly slice. Blanch the peas for 30 seconds in boiling salted water, rinse under cold water, and drain well.

Rinse, trim, and drain the scallions. Finely chop the white parts, and slice the green parts into 5 mm (approximately 1/4 inch wide) by 6-7 cm (approximately 2 1/2 - 2 3/4 inch) long strips. Mix the chopped scallions, rice vinegar, honey, and lime juice with the chili sauce. Rinse and trim the chili, then finely chop and add to the scallion mixture.

Toast the cashews and let cool. Rinse, dry, and quarter the apples. Remove the core, and thinly slice. Mix the apples slices with the vinaigrette. Mix in the cabbage, scallions, snow peas, herbs, and cashews. Drizzle with the soy sauce to taste.
