- 250 grams fresh Mackerel
- salt
- freshly ground peppers
- Pastry flour (for dusting)
- 40 milliliters olive oil
- 2 red Endive
- 1 small Grapefruit
- 1 Tbsp Mustard
- 2 Tbsps White vinegar
- 8 slices French Farmhouse bread
- Watercress (for garnish)
Preparation steps

Rinse the mackerel fillets and pat dry with paper towels. Cut in bite-size pieces, season with salt and pepper and coat with flour. Heat 10 ml (2 tsp) olive oil in a pan and cook the fish pieces for 4-5 minutes. Remove from pan and drain.

Meanwhile, Trim endive, rinse and cut into strips. Peel the grapefruit and cut the fillets between the membranes. Mix the mustard, white wine vinegar and remaining olive oil for a dressing.
3.
Toast the farmhouse bread. Divide the fish, endive and grapefruit segments on bread. Garnish with watercress and drizzle with the dressing.
