1 egg
1 Vanilla sugar
For the topping
1 ⅔ cups fine brown sugar
¾ cup honey
¾ cup butter (softened)
1 tsp Vanilla bean
3 cups Pecan (or shelled almonds)

Preparation steps

Preheat the oven to 180 °C top and bottom heat.

Line a small baking tray with parchment paper.

Sift together the oatmeal, flour, sugar, cornmeal, salt and baking powder.

Whisk together the butter and the egg until foamy. Beat in the vanilla sugar. Combine with the oatmeal/flour mixture to form a batter. Transfer the batter to the baking tray and smooth the top. Bake for approximately 10 minutes.

For the topping: melt the sugar; continue to cook until golden and caramelized. Stir in the honey and butter; continue to cook gently for another 3 minutes. Stir in the vanilla pulp. Put the mixture on top of the oatmeal cake. Bake for another 20-25 minutes. Remove the cake from the oven and allow to cool on a kitchen rack. To serve, slice into squares.
