300 grams Tofu
3 Tomatoes
2 Tbsps soy sauce
1 egg
2 Tbsps Sesame seeds
2 Tbsps breadcrumbs
2 Tbsps grated Parmesan
salt (and pepper)
2 Tbsps vegetable oil
4 Poppy seed rolls
2 Tbsps butter
8 Lettuce (Frisée)
1 Red onion
1 Tbsp Wine vinegar
1 tsp Mustard
2 Tbsps olive oil
1 tsp Walnut oil

Preparation steps

1.

Peel onion and finely chop. Rinse the parsley and chop finely. Mash tofu with a fork and mix with onion, parsley, soy sauce, egg, sesame seeds, breadcrumbs and the cheese to form a dough. Knead with hands and season with pepper. Shape dough into 4 flat patties.

Brush with oil and grill patties on a preheated grill for about 3 minutes per side.

Slice the tomatoes. Slice buns in half and spread the bottom halves with butter.

Rinse lettuce, trim and spin dry.

Peel red onion and cut into thin rings.

Mix the vinegar with mustard. Season with salt and pepper and whisk in olive and walnut oil. Mix dressing with the lettuce leaves and place on the bottom bun halves. Place a tofu patty on each and layer on tomato slices and onion rings. Season with salt and pepper, top with remaining bun halves and serve immediately.
