- 7 ozs Tofu sliced, approx. 0.5 cm (1/4 inch) thick
- 3 Tomatoes (peeled and diced)
- 1 Tbsp Basil (chopped)
- 1 Tbsp cilantro (chopped)
- 1 garlic clove (finely chopped)
- 1 Tbsp Lime juice
- 2 Tbsps soy sauce
- 2 Tbsps olive oil
- cayenne pepper
- 1 Tbsp Pine nuts (roasted)
Preparation
Kitchen utensils
1 Tablespoon, 1 Large knife, 1 Small knife, 1 Cutting board, 1 Small bowl, 1 Aluminum foil, 1 Paper towel, 1 Garlic press, 1 Baking sheet
Preparation steps
1.
Cut the tofu slices into circles approx. 8 cm | 3" in diameter.
2.
Mix the tomatoes in a bowl with the basil, coriander, garlic, lime juice, soy sauce and olive oil. Season with salt and cayenne pepper.
3.
Stack the tofu circles on top of each other and cover with the marinade. Leave for ten minutes.
4.
Sprinkle with pine nuts and serve.
