500 grams Cherry tomatoes
1 Orange (juiced)
1 tsp Agar
salt
1 tsp white balsamic vinegar
Tabasco sauce
Arugula (for garnish)

Preparation steps

Rinse tomatoes. Cut 2 tomatoes into quarters and set aside for garnish. Purée remaining tomatoes and pass through a fine sieve. Pour orange juice into a small saucepan with the agar and half of the tomato purée. Bring to a boil while stirring. Continue to cook for about 5 minutes while bubbling and then remove from heat. Gradually add the remaining tomato purée. Season with salt, vinegar and hot pepper sauce. Pour into small glasses. Chill at least 3 hours.

To serve, garnish with remaining tomatoes and arugula.
