3 Tbsps olive oil
18 ozs Tomatoes
2 shallots
1 garlic clove
2 Tbsps black, pitted Olives
1 bunch Basil
1 Tbsp White vinegar
7 ozs Feta

Preparation steps

Cut whole wheat baguettes into cubes of about 3/4-inch. Heat 1 tablespoon of olive oil in a frying pan and roast the bread cubes for 5 minutes on medium heat. Then set aside.

In the meantime, wash and halve the tomatoes and chop them into small pieces. Peel shallots and garlic. Cut shallots into fine rings, chop garlic. Cut olives in half. Wash basil, dab dry and chop coarsely. Mix the prepared ingredients with the bread cubes.

3.

Drizzle the remaining oil and vinegar over the tomato and bread salad and crumble the feta over it. Season with salt and pepper. Arrange tomato-bread salad with olives and feta on 4 plates and serve.
