- 700 grams Tomatoes
- 1 organic Orange
- 1 Grapefruit
- 1 shallot
- 2 Tbsps butter
- 1 Tbsp brown sugar
- 6 Tbsps Orange juice
- salt
- freshly ground peppers
Preparation steps

Blanch the tomatoes in boiling water, then remove. Peel and quarter, then remove the core and finely dice.

Rinse the citrus, then remove the zest being careful not to remove the bitter white pith with it. Remove the pith from the fruit, and separate the fruit into individual segments. Dice small, and set aside. Peel and finely chop the shallots. Melt the butter in a pan, and sweat the shallots. Add the tomatoes and citrus, sprinkle with the sugar, and let caramelize slightly. Add the orange juice, and cook for 10-15 minutes over medium heat. Season to taste with salt and pepper, divide into jars, and garnish with the orange zest.
