4 Tomatoes
1 tsp very finely chopped parsley (or cilantro)
2 garlic cloves
5 Tbsps fresh pressed Orange juice
2 Tbsps fresh pressed lemon juice
1 small onion
4 Tbsps olive oil
1 pinch sugar
salt
freshly ground peppers
Chervil (for garnish)

Preparation steps

1.

Blanch the tomatoes in boiling water. Remove the tomatoes from the water and peel. Cut into quarters, remove the core and seeds, and finely dice. Mix the tomatoes with the parsley. Peel the garlic and pass through a press into the tomato mixture.

Peel the onion and finely dice. Mix the onion with the orange juice, lemon juice, and the oil. Season to taste with salt, pepper, and sugar. Mix the dressing into the tomato mixture and let infuse for at least 15 minutes. 

3.

Place into small bowls, garnish with the herbs, and serve.
