Preparation steps

Rinse and quarter the tomatoes. Remove the cores and scrape out the seeds. Peel the onion. Rinse and peel the pepper. Rinse the cucumber, halve lengthwise, and scrape out the seeds. Rinse the zucchini and remove the ends. Finely dice the zucchini, cucumber, pepper, and onion. Remove the leaves from the lavender and finely chop.

Mix the tomatoes, onion, pepper, cucumber, zucchini, and lavender. Add the vinegar, lemon juice, and oil and stir to combine. Season to taste with salt, pepper, and sugar. Let marinate together for at least 2 hours before serving. Garnish the salsa with lavender and serve.
