- 1 kilogram Plum tomato
- 2 bay leaves
- 1 tsp peppercorns
- ½ tsp allspice
- 2 Tbsps Tomato paste
- 2 garlic cloves (chopped)
- 2 shallots (chopped)
- 4 oregano
- 2 Tbsps olive oil
- 100 milliliters Red wine
- 1 pinch sugar
- salt
Preparation steps

Rinse the tomatoes, remove the core, and coarsely chop.

Heat the oil in a pan, then sauté the shallots and garlic. Add the tomato paste and sauté briefly. Deglaze the pan with the red wine, then add the tomatoes. Add enough water to the pan to cover the tomatoes. Add the spices and the oregano and bring to a simmer over low heat. Cook for 30 minutes, stirring occasionally. If necessary, add some extra water. Pass through a fine strainer, and season to taste with salt and sugar.
