Preparation steps

1.

Peel and finely dice the onion and garlic. Heat the olive oil in a pan, and sauté both. Add the bay leaf and tomato paste and sauté briefly.

Blanch the tomatoes briefly in boiling water. Remove from the water and rinse under cold water. Peel the tomatoes, cut into, quarters, and coarsely chop. Add the tomatoes to the pan, then simmer the mixture for 15 minutes. Season to taste with salt, sugar, and pepper. Garnish with basil, and serve.
