- 1 Tbsp butter
- 1 finely chopped shallot
- 8 fully ripe Beefsteak tomato
- ⅛ l white wine
- 1 bay leaf
- ½ garlic clove
- salt
- peppers
- 2 Sour cream
- 1 tsp chopped Fresh herbs (Basil, tarragon)
Preparation steps

Sauté the shallots in the butter. Finely dice the tomatoes, then add to the pan with the shallots. Deglaze the pan with the white wine.

Add the bay leaf and the garlic to the pan, then season to taste with salt and pepper. Pass the mixture through a fine strainer, then mix in the sour cream and the herbs. Stir until completely combined.
