1 kilogram ripe Tomatoes
1 Tbsp Tomato paste
1 onion
2 Tbsps olive oil
500 milliliters vegetable stock
150 grams Whipped cream
salt
freshly ground peppers
Basil (for garnish)

Preparation steps

Peel and finely dice the onion. Rinse and chop the tomatoes. Heat the oil in a pan and saute the onion until soft. Stir in the tomato paste. Add the tomatoes and saute. Stir in the broth. Season with salt and pepper. Simmer for approximately 20 minutes.

Strain the soup through a sieve and pour back into the pot. Heat and season to taste. Whip the cream. Divide the soup into bowls and place a dollop of cream on each. Serve garnished with basil.
