150 grams Bacon (thick sliced)
200 grams Spinach
2 slices Farmhouse bread
salt
freshly ground peppers
5 Tbsps olive oil
4 Tbsps balsamic vinegar
150 grams coarsely grated Emmentaler cheese

Preparation steps

1.

Cook tortellini in salted boiling water until they float to the surface, 4-5 minutes. Drain.

2.

Cut bacon into 2 cm (approximately 3/4 inch) cubes and fry in a skillet.

3.

Rinse spinach and spin dry. Toast bread and break into small pieces. Heat vinegar and olive oil with bacon in skillet. Season with salt and pepper. Add spinach, bread, tortellini and cheese to the pan and toss before serving
