2 Tbsps butter
2 cooked potatoes (grated)
1 red chili pepper (finely chopped)
8 eggs
2 cups smoked Salmon (cut into strips)
3 scallions (cut into strips)
3 Tbsps Mascarpone (to garnish)

Preparation steps

Heat the oil and butter in two large frying pans and divide the grated potato and chilli between them and fry briefly in the hot fat.
2.
Whisk the eggs, season with salt and ground black pepper and pour into the pans. Place the smoked salmon and spring onions on top, stir gently, cover and cook over a low heat for 8-10 minutes, until the eggs are set. Season with salt and ground black pepper. Garnish with a few spoonfuls of mascarpone and serve on large plates.
