500 grams trout with skin (to taste)

3 Tbsps lemon juice
3 eggs
150 milliliters Whipped cream
150 milliliters Sour cream
4 sprigs parsley
4 sprigs Dill
80 grams smoked trout
100 grams Cherry tomatoes
parsley (for garnishing)

Preparation steps

Butter baking dish.

Rinse trout fillets, pat dry and remove any bones. Season with salt, pepper and 1 tablespoon of lemon juice and arrange in the pan. Whisk eggs with cream and sour cream, season with salt, pepper and lemon juice, pour over fish. Bake in preheated oven at 180°C (approximately 350°F) for about 25-30 minutes.

Rinse parsley and dill, shake dry and chop finely. Tear smoked trout with a fork into fine pieces and mix with herbs. Rinse and halve tomatoes. Spread smoked trout and tomatoes on gratin and garnish with parsley leaves. Serve immediately.
