2 Cucumber (cut lengthways into thin strips)
11 ozs very fresh Tuna (finely chopped)
salt
peppers
1 lemon (juice)
2 Tbsps extra virgin olive oil
3 scallions (finely chopped into rings)
For the dip
5 ozs light Mayonnaise
1 Tomato (diced)
¼ Cucumber (peeled and diced)

Preparation steps

1.
Blanch the cucumber strips in boiling salted water for 2-3 minutes. Drain on kitchen paper.

Season the tuna with salt, pepper, lemon juice and oil and stir in the spring onions. Chill for 30 minutes.
3.
Roll each cucumber slice into a cylinder and fasten with a cocktail stick. Place the rolls on a large plate and fill each one with the tuna mixture. Chill until ready to serve.
4.
For the dip: mix together the mayonnaise, tomato and cucumber and season with salt and pepper. Serve the cucumber rolls with the dip in a small bowl.
