3 ozs green or black Olives
14 ozs turkey breasts
2 Tbsps olive oil
2 Tbsps freshly chopped cilantro
salt

8 large Whole-wheat tortillas
7 ozs grated Mozzarella
7 ozs grated Cheese (such as Cheddar)

Preparation steps

Blanch tomatoes, drain, rinse with cold water, peel, quarter, core and finely dice. Peel onion and garlic and finely chop. Chop olive. Rinse turkey breast and pat dry. Either chop or mince.

Heat oil in a pan and fry turkey meat on all sides until brown and crumbly. Add onion and garlic and fry for another 2 minutes. Add tomatoes and fry for approximately 5 minutes. Add cilantro and olives, mix and season with salt and chili powder.

Place four tortillas on a round stovetop grill or on a baking sheet. Mix mozzarella with cheddar in a bowl and sprinkle half of mixture over tortillas. Then cover with turkey mixture. Sprinkle with remaining cheese and place a second tortilla on top. Press quesadilla grill closed and cook for about 10 minutes (or cook under a preheated oven broiler, watching carefully, for 5-10 minutes. Rotate from time to time until cheese begins to melt.

Remove quesadillas and serve cut into pieces
