2 slices Prosciutto
1 Mango
100 grams Sprout
4 Tbsps light soy sauce
½ bunch Sage

1 Tbsp honey

Preparation steps

1.

Peel and pit mango, cut into fne wedges.

2.

Season turkey cutlets with salt and pepper. Heat 1 tablespoons of butter in a pan and cook cutlets for about 2 minutes per side. Remove from the pan and keep warm, covered with aluminum foil. 

3.

In the same pan, caramelize mango with 1 tablespoon of honey. Add sprouts and deglaze pan with soy sauce. Arrange mango on warmed plates.

4.

Heat 1 tablespoon of butter in a pan and fry sage leaves until crispy, remove from the pan. Cook ham in the same pan and spread ham and sage on top of cutlets. Fold in half and arrange on top of mango. Serve.
