- ¾ cup plain Yogurt
- 1 ½ Tbsps Mayonnaise
- ½ lemon (juiced)
- 1 clove garlic cloves (minced)
- 16 spears white Asparagus (trimmed)
- 28 spears green Asparagus (trimmed)
- 4 canned Artichoke hearts (drained and sliced)
- 2 eggs (hard-boiled)
- 1 tsp red peppercorns
- salt
- peppers
Preparation steps

Whisk together the yogurt, mayonnaise, lemon juice and garlic until smooth. Adjust the seasoning to taste and set to one side.

Cook the asparagus in a large saucepan of salted, boiling water for 2-3 minutes until ‘al dente. ’ Drain and refresh in iced water.

Halve the boiled eggs and roughly chop the yolks.
4.
Arrange the asparagus on plates and sit the artichoke next to them.
5.
Garnish with the sauce, a sprinkling of egg yolk and a few peppercorns before serving.
