- For the biscuits
- ½ cup unsalted butter
- ½ cup caster sugar
- 1 egg (lightly beaten)
- 1 tsp vanilla extract
- 2 ½ cups all-purpose flour
- For the filling
- 9 Tbsps Apricot Jam
- 1 tsp lemon juice
- For the icing
- 2 ½ cups powdered sugar
- 2 Tbsps water
- pink Food coloring

Heat the oven to 190°C / 375°F. Line a large baking tray with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until soft and creamy. Gradually beat in the egg and vanilla.

Add the flour and mix to a dough.

Roll out the dough on a lightly floured surface to a thickness of 1/2".

Using a heart-shaped cookie cutter, cut biscuits out of the dough and place on the baking tray.

Bake for 8-10 minutes, until pale golden-brown. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.

For the filling: put the jam and lemon juice in a small pan and heat gently until melted. Bring to a boil and boil for 2-3 minutes. Set aside to cool and thicken.
8.
For the icing: sift the icing sugar in to a bowl and stir in the water. Set 1/4 of the icing aside. Colour the remaining icing pink and spread over half the biscuits.
9.
Spread the jam on the un-iced biscuits and place an iced biscuit on top.
10.
Drizzle with the reserved white icing and leave to set.
