250 grams Pastry flour
100 grams ground almonds
220 grams butter

Preparation steps

Halve the vanilla bean lengthwise and scrape out the seeds. Mix the vanilla and sugar. Mix the flour, almonds, softened butter and 70 grams (approximately 2.5 oz) of the vanilla sugar. Quickly knead into a smooth dough. Form the dough into a ball and wrap in foil. Chill for at least 30 minutes. Preheat the oven to 180°C (approximately 350°F).

Shape the dough into a 3 cm roll. Cut 1 cm wide pieces and form into moons. Place the dough shapes on a lined baking sheet. Bake for about 10 minutes. Carefully remove the cookies from the baking sheet and roll in the remaining vanilla sugar. Serve warm.
