250 grams Pastry flour
100 grams sugar
2 Vanilla bean
200 grams butter
100 grams peeled almonds
powdered sugar (for dusting)

Preparation steps

Slit the vanilla bean lengthwise and scrape out the seeds. Mix the flour, softened butter, almonds, vanilla seeds and 70 grams (approximately 2.5 ounces) of sugar. Quickly knead into a smooth dough. Wrap the dough in plastic and chill for at least 30 minutes.

Form the dough into a long roll on a surface dusted with powdered sugar. Cut 2 cm pieces, shape into crescents and place on a lined baking sheet. Bake for about 10 minutes at 175°C (approximately 350°F). Remove from the oven, cool slightly, roll in the remaining sugar and serve.
