350 milliliters Apple juice (well chilled)

Preparation steps

Rinse and trim the scallions, then cut into pieces. Peel the cucumber and coarsely chop. Rinse and trim the pepper and the chili. Cut both peppers in halve, and coarsely chop. Rinse and dry the parsley. Puree the parsley, scallions, cucumber, pepper, chili, and the lemon juice in a blender. Pass through a fine strainer, and chill in the refrigerator for 1 hour. Before serving, mix in the apple juice and oil. Season to taste with salt, mix well, and serve.
