Preparation steps

Clean, peel and wash the carrot, cut into fine sticks or strips, and place in a bowl. Peel and finely chop the garlic. Put 1.5 Tablespoon rice vinegar, 1 tsp rice syrup, salt, garlic, and 1 pinch of chili flakes with 3.5 Tablespoons water in a small pot. Heat liquid over low heat, stirring, until syrup and salt are dissolved. Then bring to a boil and pour into the carrots. Mix everything well and let marinate covered for 30 minutes in a cool place.

Meanwhile, add rice to a pot with 16 ounces of water and bring to a boil, stirring occasionally. Cook rice for 2 minutes in open pot over low heat, then cover and cook over lowest heat for 15 minutes until it has completely absorbed the water. Meanwhile, heat remaining rice vinegar with 1 pinch salt and remaining rice syrup. Place sushi rice in a bowl, stir in vinegar mixture and beet juice and set aside, covered.

Clean the spring onion and bell pepper, wash and cut into very thin strips. Lift avocado flesh from peel and cut into slices. For the dip, mix turmeric, lime juice and yogurt, season with salt and 1 pinch of chili flakes. Drain carrots and ginger.

Divide rice into 8 portions. Shape 1/8 into a rectangle about 1/2 inch thick and place in the center of a nori sheet. Top each with 1 layer of carrots, green onion, avocado, bell pepper, and ginger. Shape 1 more rice box into a rectangle, place on top, moisten the 4 corners of the nori sheet with a little water, fold up and close. Form 3 more sushi sandwiches this way. To serve, cut sandwiches in half, sprinkle with sesame seeds and drizzle with turmeric cream.
