- non-stick cooking spray
- 2 large Tortillas (10-inches)
- 4 Tbsps Pesto (store bought)
- 1 large, ripe Avocado (thinly sliced)
- ½ cup fresh Mozzarella (thinly sliced)
- 4 sprigs fresh Basil (to garnish)
- light Sour cream (to serve)
- Tomato salsa (to serve)
Preparation steps

Spray a large skillet with nonstick cooking spray and place over medium-low heat. Arrange one tortilla in the skillet. Spread a thin layer of pesto over the entire tortilla. Arrange sliced avocado over the top of the pesto, followed by the sliced mozzarella. Top with remaining tortilla.

Increase heat to medium-high. Cook tortilla on both sides until nicely browned. Using a sharp knife or a pizza cutter, slice in half and into wedges. Transfer to serving plates and garnish with fresh basil sprigs. Serve with light sour cream and salsa.
