150 grams Whole grain cracker
2 Tbsps Cherry brandy
300 grams Sweet cherry
100 grams Sugar and soft butter
2 eggs
50 grams Hazelnuts

Preparation steps

1.

Chop chocolate, combine with cream and melt, stirring.  Stir in brandy and leave to cool. Place cookies into a plastic bag and crumble with a rolling pin. Drizzle with kirsch. Rinse, clean and pit cherries.

Whisk butter with sugar until fluffy. Separate eggs and stir in egg yolks gradually into butter mixture. Add 125 grams (approximately 4 1/2 ounces) of cookie crumbs, cherries and hazelnuts. Beat egg whites until very stiff and fold into the mixture.

Butter pudding pan well and sprinkle with remaining cookiecrumbs. Spread batter in the pan. Fill large pot halfway with water and bring to a boil, place pudding pan into it, cover and simmer for about  45-50 minutes on low heat.

4.

Invert pudding onto a plate and dust with powdered sugar. Drizzle with chocolate sauce and serve.
