22 ozs Watermelon
½ bunch Radish
1 mild white onion
2 ½ ozs mint (1 handful)
½ oz Micro- Fresh herbs (1 handful; e.g. basil or cress)
6 ozs fresh goat cheese
1 Tbsp apple cider vinegar
1 ½ ozs Vegetable broth
salt
peppers
3 Tbsps olive oil
fine Fleur de sel

Preparation steps

1.

Halve watermelon lengthwise, cut crosswise into approx. 1/4th inch thin slices, remove rind and any seeds. Clean, wash and finely slice the radishes. Peel onion, halve, and cut into fine strips. Wash mint and micro herbs and shake dry.

Arrange melon on plates or a platter. Arrange radishes and onion strips on top, sprinkle with mint and herbs and add goat cream cheese in small blobs.

3.

For the dressing: whisk vinegar with broth, salt, pepper, and oil. Drizzle salad with it, grind pepper over it, and serve sprinkled with fleur de sel.
